Breakfast: Vegan No-Sugar Oat Drops

Lunch: Cheesy Crab Burritos + grapefruit, pomegranate

Dinner: BBQ Steak Flatbread, Pasta with Sausage and Tomatoes, Broiled Orange Roughy, rice, yellow beets, yellow bell peppers, lettuce

Dessert: Crepes with peaches, raspberries, and icing sugar

Broiled Orange Roughy (or Red Snapper or Haddock)

If frozen, thaw  1 1/2 lbs of orange roughy, red snapper, or haddock fillets. Place fillets in a shallow dish. Sprinkle with 1 tsp of garlic powder. Combine 1/4 cup of melted butter, 1/4 cup of lemon juice, and 1/4 cup of soy sauce. Pour over fish and turn. Marinate for 10 minutes.

Drain and discard marinade. Place fillets on a broiler pan. Broil* 3-4 inches from the heat for 10 minutes, turning once. Sprinkle with paprika.

*Can also be cooked on an outdoor grill for easy kitchen clean up

Cheesy Crab Burritos

Preheat oven to 350 degrees. Combine a package of softened cream cheese and 2 cups of shredded cheddar cheese in a mixing bowl. Stir in a flaked package of imitation crabmeat. Spoon down the centre of 8 flour tortillas. Roll up tightly and place on an ungreased baking sheet. Bake for 20 minutes. Serve with salsa.

Serve with a green lettuce (I recommend lettuce, yellow bell peppers, and yellow beets), rice, and beans.

Crepes

I featured the recipe I use for crepes last week. I made them again this week, but with raspberries, peaches, and icing sugar instead of sliced strawberries.

No-Sugar Vegan Oat Drops

Preheat oven to 350 degrees. Line baking sheet with parchment paper.

In a large bowl, combine 1 1/2 cups of regular rolled oats (or whatever type of oats you have on hand), 1/4 cup of almond meal (or another nutmeal of your choice), 1/2 cup of finely chopped mixed nuts and 1 cup of coconut flakes. Stir in 1/2 tsp of allspice and 1 tsp of cinnamon. Add 1 cup of dried fruit/chocolate chips/berries (I usually do 1/3 cup of each but if you truly want no-sugar, skip the chocolate chips). Stir. Make sure the dried fruit do not stick together in big batches.
In another bowl, combine 1/4 cup of canola oil (or oil of your choice), 3 mashed banana and 1 tsp of vanilla extract. Pour wet ingredients over dry ingredients and stir until well combined. 

Take a large cookie cutter and press spoonfuls of the batter into it. Remove cookie cutter.  Or simply form balls with your hands and flatten slightly. Bake for about 20 minutes.

***Applesauce or 2 eggs could be subbed for mashed bananas, if you prefer***

Pasta with Sausage and Tomatoes

Cook and drain a package of your favorite pasta according to box directions. Cook 1 lb of bulk Italian sausage in a skillet over medium heat. Drain. Add 2 cans of diced tomatoes (don’t drain them) and 1 1/2 tsp of chopped fresh basil or 1/2 tsp of dried basil. Simmer, uncovered, for 10 minutes. Serve immediately over pasta.

BBQ Steak Flatbread

Preheat oven to 350 degrees. Grill and cube a small round steak. Place a prebaked Italian flatbread on a pizza pan. Spread with 2/3 cup of honey garlic BBQ sauce. Sprinkle with a chopped red onion, cubed steak, and 2 cups of shredded mozzarella cheese. Bake for 10 minutes.

Apple Cinnamon Breakfast Bars (Dinner for Two Week 19)

Breakfast: Pineapple Ham Bake, Apple Cinnamon Breakfast Bars, or Yogurt

Lunch: Leftovers + prunes, figs, grapes, raisins

Dinner: Italian Flank Steak, Mini Sausage Pizzas, or Honey Mustard Chicken, rice or potatoes with onion, parsnip and shallot

Dessert: Key-Lime Avocado Pie

Italian Flank Steak

Combine 2 envelopes of fat-free Italian salad dressing mix, 2 Tbsp of vegetable oil, and 1 Tbsp of lemon juice. Brush onto both sides of a 1 lb flank steak. Place in a shallow dish. Cover and refrigerate for at least 8 hours.

Grill over hot heat for 3 minutes per side.

Mini Sausage Pizzas

Preheat oven to 425 degrees. Cook 1 lb of bulk pork sausage in a large skillet over medium heat. Drain well. Beat 2 5 oz jars of sharp American cheese spread, 1/4 cup of butter, and 1/4 tsp of cayenne pepper in a small mixing bowl. Stir in sausage. Split 12 English muffins. Spread cheese mixture on cut sides of each muffin half.

Place on a baking sheet and bake for 8-10 minutes.

This pizzas freeze really well. Wrap them individually and freeze for up to 2 months. When ready to eat, unwrap, place on a baking sheet, and bake at 425 degrees for 10-15 minutes. 

Key-Lime Avocado Pie

To make the crust: In a food processor, combine 3/4 cup of shredded unsweetened coconut, 1/4 cup of unsalted macadamia  nuts, 1/2 tsp of lime zest, and 1/8 tsp of salt, and chop coarsely. Add 1 tsp of lime juice and 1/2 cup of chopped dates and process until it sticks together. Sprinkle a 9″ pie plate with 2 Tbsp of coconut and pat the crust on top and up the sides of the plate. Chill while making filling.

To make filling: Combine 1 1/2 cup of avocado, 1/3 cup of fresh lime juice, 1/3 cup of honey or agave, 4 Tbsp of refined coconut oil, and 1/4 tsp of salt in a blender. Blend until smooth. You may have to add more lime juice and honey/agave depending on the moisture in the avocado. If it needs more liquid, I recommend adding equal parts of both. Adjust flavors to taste. Pour over crust and chill 4-6 hours. Garnish with zest of half a lime and some lime slices.

Note: Unrefined coconut oil can be used, but it will give the pie a more coconut flavor. I prefer it that way, but some like the traditional key-lime flavor better. 

Apple Cinnamon Breakfast Bars

Preheat oven to 375 degrees. Line a baking pan with parchment paper so that the paper comes over the sides. (You’re going to lift it up later to easily remove the bars from the pan without making a mess.)

Mix 1/2 cup of vanilla whey protein powder, 1/4 cup of your choice of flour, 1/2 cup of rolled oats, 1/2 cup of spelt flakes, 1/3 cup of spelt bran, 1/4 cup of wheat germ, 1/2 tsp of sea salt, 2 tsp of cinnamon, 1/4 tsp of nutmeg, 1/8 tsp of cardamom, 1/8 tsp of allspice, 1/2 cup of organic dried apples and 1/2 cup of peeled and grated apple in one bowl.

Mix 2 Tbsp of honey or agave, 1/2 cup of unsweetened applesauce, 2 Tbsp of melted coconut butter, and 1 tsp of vanilla in another bowl.

Combine well by stirring with a spoon. The batter should be chunky.

Pour the batter into the lined baking pan and use another piece of parchment and even off the surface.

Bake for 20 minutes.

Remove the pan from the oven and lift the parchment paper ‘handles’ out. Allow the bars to cool for about 15 minutes and then slice into 8 even rectangles.

Pineapple Ham Bake

Preheat oven to 350 degrees. Combine 2 undrained cans of crushed pineapple, 2/3 cup of packed brown sugar, 1 Tbsp of vinegar, and 2 tsp of ground mustard in an ungreased baking dish. Mix well. Cut 1 lb of fully cooked ham into bite-size pieces. Stir into pineapple mixture. Bake, uncovered, for 30-40 minutes. Serve with a slotted spoon.

Honey-Mustard Chicken

Flatten 4 chicken breasts to 1/4 inch thickness. Combine 1 cup of dry bread crumbs and 1 tsp of Dijon mustard in a shallow bowl or pie plate. Combine 3 Tbsp of honey and 2 Tbsp of Dijon mustard in another shallow bowl or pie plate.  Dip chicken in honey-mustard mixture and then coat with crumbs.

Cook chicken in 2 Tbsp of butter in a nonstick skillet over medium heat on both sides for about 8 minutes.

Chocolate Panna Cotta Notta (Dinner for Two Week 17)

Breakfast: Olive Oil Granola, Breakfast Kabobs, Breakfast Treats, Cinnamon bun

Lunch: Black currants, blackberries, blueberries, dried plums

Dinner: Salsa Fish, ginger and garlic rice, zucchini or cauliflower

Dessert: Blueberry Pudding Cake or Chocolate Panna Cotta Notta

Chocolate Panna Cotta Notta

In a saucepan add 2 cups of almond milk and 4 tsp of agar agar powder. Let it sit for 5 minutes to allow agar agar to soften.

In a medium bowl add 1/4 cup of cocoa powder, 1/4 cup of coconut oil, and 1/4 cup of agave nectar. Stir to combine ingredients thoroughly and set aside.

Bring almond milk/agar mix and 1/2 tsp of vanilla extract to a simmer, then reduce and cook for 8 minutes.  Add chocolate mixture and stir to combine for 30 seconds.  Remove from heat.

Pour into 4 ramekins or small glasses.  (Use ramekins if you plan to turn out onto plates.  Use glasses if you intend to serve panna cotta’s in their own containers.)

Refrigerate for at least 2 hours.

To release panna cotta from ramekins – run a knife around edges of panna cotta and place individual ramekin into warm water for approximately 30 seconds.  Put plate on top of ramekin and turn over to release panna cotta from ramekin.

Top with chopped almonds and flaked coconut for extra flair.

*You can also use a vanilla bean, instead of vanilla extract in this recipe.  Split the vanilla bean and scrape the seeds.  Place the pod and seeds in the almond milk and agar agar mixture just before you start to simmer the mixture.  Remove the pods before adding in the chocolate.

Salsa Fish

Preheat oven to 400 degrees. Coat 2 lbs of fish fillets in 1 cup of seasoned bread crumbs. Brown fillets in 1 Tbsp of vegetable oil in a skillet. Arrange in a greased baking dish. Top with 1 1/2 of salsa, 1/2 cup of shredded mozzarella cheese, and 1/2 cup of shredded provolone cheese.

Bake, uncovered, for 7-10 minutes.

Blueberry Pudding Cake

Preheat oven to 350 degrees.
Oil a circular deep ceramic pie or gratin dish.

In a mixer combine 3/4 cup of almond meal, 3/4 cup of gluten-free all-purpose flour, 1/4 tsp of xantham gum, 2 tsp of gluten-free baking powder and 1/4 tsp of salt. Mix on low speed until combined.
Mix 2/3 cup of soymilk (or regular skim), 1/3 cup of agave nectar, and 1/3 cup of egg whites in a smaller bowl. Add to the dry ingredients in the mixer and mix well to form the batter.

Place 2 cups of frozen blueberries on the bottom of the pre-oiled dish. Place the ceramic dish on top of a cookie sheet to catch drips during baking. Pour the batter on top of the berries. Mix 1/4 cup of turbinado sugar with 1 Tbsp of arrowroot. Sprinkle the sugar mixture on top of the batter. Pour the boiling water carefully on top of the whole thing and bake for 55-60 minutes. Let cool before serving.

Notes: 3/4 cup of regular all-purpose flour can be substituted for the gluten-free all-purpose flour mix and xantham gum if you are not on a gluten- or wheat-free diet. 

Refrigerate the leftovers. It’s great cold, especially with coffee!

Cornstarch can be substituted for arrowroot. 

For an extra special touch, make a batch of fresh whipped cream with a little agave nectar and a tsp of hazelnut or almond extract. Yum!

Olive Oil Granola

Preheat oven to 300 degrees.

In a large bowl, combine 3 cups of old-fashioned rolled oats, 1 1/2 cups of raw pistachios, 3/4 cup of pumpkin seeds, 1/2 cup of wheat germ, 1/2 cup of ground flax seed, 1 tsp of salt, 1/2 tsp of cinnamon and 1/2 tsp of cardamom, and mix together. In a small bowl, combine 1/2 cup of extra virgin olive oil, 3/4 cup of pure maple syrup and 1/4 cup of light brown sugar, and whisk until fully combined. Add wet mixture to the oat mixture, and stir to fully coat.

Spread the granola mixture in an even, single layer on rimmed, parchment-lined baking sheets, working in batches if necessary.

Bake on the middle rack of the oven for 30 minutes, stirring every 10 minutes. Stir 1 cup of shredded coconut into the mixture prior to the final 10 minutes of baking.

Remove from the oven and fully cool before serving. Store in an air tight container.

Breakfast Treats

Wrap plain smoked sausage with half a strip of bacon. Secure with a toothpick. Place in a baking dish and sprinkle with brown sugar. Bake at 350 degrees for 1 hour.

Breakfast Kabobs

Cut a package of brown ‘n’ serve sausage links in half. Drain a can of pineapple chunks. Alternatively thread sausages, pineapple chunks, and mushrooms onto metal or soaked bamboo skewers. Brush with 2 Tbsp of melted butter and some maple syrup.

Grill, uncovered, over medium-hot heat, turning and basting with syrup, for 8 minutes. Serve with your favorite egg dish.

When Things Get Blue (Dinner for Two Week 16)

Breakfast: Pancakes or Waffles with Blueberry Sauce Supreme

Lunch: Green salad with Thousand Island or French Salad Dressing or Broccoli Waldorf Salad, pear or watermelon

Dinner: Savory Roast Chicken with rice and Sauteed Mushrooms or Sausage Spaghetti Spirals with salad, sugar snap peas/watercress

Sauteed Mushrooms

Melt 1/4 cup of butter in a skillet. Add 1 lb of sliced fresh mushrooms, 1 Tbsp of lemon juice, and 1 Tbsp of soy sauce. Saute for 6-8 minutes.

Waffles

  1. Preheat waffle iron. Beat 2 eggs in a large bowl with a hand beater until fluffy. Beat in 2 cups of all-purpose flour, 1 3/4 cups of milk, 1/2 cup of vegetable oil, 1 Tbsp of sugar, 4 tsp of baking powder, 1/4 tsp of salt, and 1/2 tsp of vanilla extract.
  2. Spray preheated waffle iron with nonstick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot.

Foolproof Pancakes

  • STEP 1

Preheat oven to 200 degrees. Have a baking sheet or heatproof platter ready to keep cooked pancakes warm in the oven. In a small bowl, whisk together 1 cup of all-purpose flour, 2 Tbsp of sugar, 2 tsp of baking powder, and 1/2 tsp of salt. Set aside.

  • STEP 2

In a medium bowl, whisk together 1 cup of milk, 2 Tbsp of melted unsalted butter (or oil), and 1 egg. Add dry ingredients to milk mixture. Whisk until just moistened. The key is to not overmix. A few small lumps here and there are fine.

  • STEP 3

Heat a large skillet (nonstick or cast-iron) or griddle over medium. Fold a sheet of paper towel in half, and moisten with oil; carefully rub skillet with oiled paper towel.

  • STEP 4

For each pancake, spoon 2 to 3 tablespoons of batter onto skillet, using the back of the spoon to spread batter into a round (you should be able to fit 2 to 3 in a large skillet).

  • STEP 5

Cook 1-2 minutes. Flip carefully with a thin spatula, and cook 1-2 minutes more. Transfer to a baking sheet or platter; cover loosely with aluminum foil, and keep warm in oven. Continue with more oil and remaining batter. (You’ll have 12-15 pancakes.) Serve warm, with desired toppings.

Blueberry Sauce Supreme

Combine 1/2 cup of sugar, 1/4 cup of orange juice concentrate, and 2 Tbsp of cornstarch in a pot. Stir until smooth. Add 3 cups of fresh or frozen blueberries and bring to a boil. Boil for 2 minutes, stirring constantly.

Serve on top of pancakes, waffles, ice cream, granola/yogurt, muffins, pies, cheesecake, desserts…

Thousand Island Dressing

Combine 2 cups of mayonnaise, 1/4 cup of chili sauce, and 1/4 cup of pickle relish in a bowl. Store in the refrigerator.

Salad Suggestion: Lettuce, leeks, okra, persimmons, pineapple, and roasted pumpkin seeds. Leftover nuts, seeds, cheese, dried fruit

Broccoli Waldorf Salad

Combine 6 cups of broccoli florets, a large chopped red apple, 1/2 cup of raisins, and 1/4 cup of chopped pecans in a large serving bowl. Drizzle with 1/2 cup of coleslaw dressing. Toss to coat. Refrigerate leftovers.

Savory Roast Chicken

Preheat oven to 375 degrees. Place a broiler/fryer chicken breast side up on a rack in a shallow roasting pan. Combine 2 Tbsp of melted butter, 3 Tbsp of lemon juice, and either 1 Tbsp of minced fresh savory or 1 tsp of dried savory. Brush over chicken. Bake, uncovered, for 1 1/2 hours, basting occasionally with the pan dripping.

Sausage Spaghetti Spirals

Preheat oven to 350 degrees. Cook 1 lb bulk Italian sausage and a chopped green pepper over medium heat in a skillet. Drain. Stir in 5 cup of cooked spiral pasta and a jar of meatless spaghetti sauce. Mix well.

Transfer to a greased baking dish. Cover and bake for 25 minutes. Uncover. Sprinkle with 1 1/2 cups of mozzarella cheese. Bake 5-10 minutes longer.

Salsa Sausage Quiche (Dinner for Two Week 3)

Breakfast: Quiche

Lunch: Roast beef sandwich, Chili burger, or Chili dog, Pretzel nuggets, Fig or Prune

Dinner: Chicken or Beef, Rice or Sweet potato, Bell pepper

Two Meals One Pot Take Three

Combine 2 cans of chili with beans, 2 cans of drained mixed vegetables, 2 drained cans of whole kernel corn, 2 cans of diced tomatoes, and 2 cans of green chilies in a pot. Add a dash of chili powder and a dash of garlic powder. Heat through.

  1. Cook hamburger patty. Toast a hamburger bun if desired. Spoon chili mixture onto hamburger patty. Top with leftover vegetables, cheese, and/or condiments if you have any or just eat as a chili burger.
  2. Cook a hot dog. Zap hot dog bun in microwave for 15-30 seconds. Spoon chili mixture onto hot dogs. Add leftover sauerkraut, onions, cheese, and/or condiments, if desired or just eat as a chili dog.

Sweet and Savory Brisket

  1. Cut a 3 to 3.5 lb beef brisket in half and place half in a slow cooker. Combine 1 cup of ketchup, 1/4 cup of grape jelly, an envelope of onion soup mix, and 1/2 tsp of pepper in a bowl. Spread half over meat in slow cooker. Top with the second half of the brisket and then the rest of the ketchup mixture.
  2. Cover and cook on low for 8-10 hours. Slice brisket and serve with cooking juices. The leftovers are great zapped in the microwave as well as made into a roast beef sandwich with a little mayo.

Artichoke Chicken

  1. Preheat oven to 375 degrees. Drain and chop a can of water-packed artichoke hearts. Combine artichokes, 3/4 cup of grated Parmesan cheese, 3/4 cup of mayonnaise, and a dash of garlic powder in a bowl. Place 4 chicken breasts in a greased baking dish. Spread with artichoke mixture. Bake, uncovered, for 30-35 minutes.

Salsa Sausage Quiche

  1. Preheat oven to 375 degrees. Cook 3/4 lb bulk pork sausage in a skillet over medium heat. Drain. Transfer to an unbaked pastry shell. Sprinkle with 1 cup of shredded cheddar cheese. Lightly beat 3 eggs in a small bowl. Stir in 1 cup of salsa. Pour over cheese.
  2. Bake for 30-35 minutes. Sprinkle with another cup of cheese. Bake 5 minutes longer. Serve with extra salsa and sour cream.

Sweet Pretzel Nuggets

  1. Place a package of sourdough pretzel nuggets in a glass bowl. Combine 2/3 cup of vegetable oil, 1/3 of sugar, and 2 tsp of cinnamon in a small bowl. Pour over pretzels and toss to coat. Microwave, uncovered, for 2 minutes. Stir. Microwave 3-4 minutes longer, stirring after each minute. Cool to room temperature.

Note: It is sometimes hard to find sourdough pretzel nuggets. Regular pretzels can be used instead. One time I cut up sourdough bread into bite-sized pieces and toasted it before tossing with the oil, sugar, and cinnamon.

Week 46

Bag of chips (Plain pairs the best as a side dish so it doesn’t overwhelm the main attraction of the meal)

Hot Hoagies

Combine 3/4 cup of softened butter and an envelope of Italian salad dressing mix. Spread 1 Tbsp inside each of 6 hoagie buns. On bottom of each bun, layer one slice of meat, two slices of cheese, and another slice of meat. Replace tops. Spread 1 Tbsp of butter mixture over top of each bun.

Place on a baking sheet. Broil 6 inches from the heat for 2-3 minutes. Eat with chips and pickles.

 

Colorful Kabobs

Cut 1 lb of fully cooked smoked turkey sausage into 1/2 inch chunks. Cut 2 green peppers into 1 inch pieces. Cut an onion into wedges. Thread a cherry tomato onto six metal or soaked wooden skewers. Alternate the sausage, green pepper, and onion wedges on skewers, ending with another tomato.

Grill, uncovered, over medium-hot heat for 10-15 minutes. Remove meat and vegetables from skewers and serve over rice.

 

Mozzarella Puffs

Preheat oven to 375 degrees. Take apart a refrigerated tube of buttermilk biscuits and make an indentation in the center of each biscuit. Sprinkle with 1 tsp of dried oregano. Cut a 2-3 oz block of mozzarella cheese into 10 cubes, 3/4 inch each. Place a cube in the center of each biscuit. Pinch dough tightly around cheese to seal.

Place seam side down on an ungreased baking sheet Spread 2 Tbsp of pizza sauce over tops. Bake 10-12 minutes.

 

Week 29

Lunch: Chili, mushroom bites, and an apricot

Dinner: Italian sausage skillet and watercress

 

Quick Chili

Cook 1 lb ground beef over medium heat in a pot. Drain. Add can of condensed tomato soup, a can of chili beans in gravy, and 3 tsp of chili powder. Reduce heat. Cover and simmer for 20 minutes. Add 1/2 cup of water if you like your chili thinner.

 

Italian Sausage Skillet

Brown 1 1/4 lbs of Italian sausage links in a skillet over medium heat. Drain. Cut sausage into 1/4-inch slices. Return to the skillet to brown completely.

Add 1 or 2 small cubed zucchinis, a cubed yellow summer squash, and 1/2 a chopped onion. Cook and stir for 2 minutes. Stir in a 14 1/2 oz can of stewed tomatoes. Reduce heat. Cover and simmer for 10-15 minutes. Serve over rice or pasta.

 

Mushroom Bacon Bites

Wash 24 mushrooms. Never submerge mushrooms in water – they’ll absorb too much water and become mushy. Just rinse in cold water and dry with paper towel just before using. Cut 12 bacon strips in half. Wrap each mushroom with a piece of bacon and secure with a toothpick. Thread onto metal or soaked bamboo skewers. Brush with 1 cup of BBQ sauce.

Grill, uncovered, over indirect medium heat for 10-15 minutes, turning and basting occasionally with remaining BBQ sauce.

Week 25

Vegetable Noodle Soup

Bring 3 1/2 cups of milk to a boil in a large pot. Stir in a package of frozen California-blend vegetables and return to a boil. Reduce heat. Cover and simmer for 6 minutes.

Stir in 1/2 cup of cubed process cheese and an envelope of chicken noodle soup mix. Return to a boil. Reduce heat. Simmer, uncovered, for 5-7 minutes, stirring occasionally.

 

Apricot Sausage Kabobs

Combine 3/4 cup of apricot preserves and 3/4 cup of Dijon mustard. Mix well. Remove 1/2 cup for serving and set aside. Slice 1 lb of fully cooked kielbasa or Polish sausage into 12 pieces. On 4 metal or soaked bamboo skewers, alternate sausage pieces, mushrooms, and dried apricots. Each skewer should have 3 of each. Alternatively, make 6 skewers with two of everything on each.

Grill, covered, over indirect heat for 15-20 minutes. Turn frequently and baste with remaining apricot sauce. Warm the reserved sauce and serve with kabobs. Make rice according to package directions. Serve with kabobs and sauce.

 

Harvest Apple Drink

Bring a can 46 oz can of apple juice, 1/3 cup of packed brown sugar, 2 cinnamon sticks and 6 whole cloves to a boil in a medium pot. Reduce heat and simmer for 15 minutes. Strain. Drink warm.

Week 3

Shopping List:

Greek yogurt (I like coconut, honey, or vanilla best)

[You’ll need a bigger carton of milk this week as well. Get a 2L. Also banking that you still have whole oats, flax, and chia seeds leftover from last week and that you have brown sugar in your pantry]

 

Breakfast: Whole oats with flax, chia seeds, a sprinkle of cinnamon, a splash of almond milk, and a big dollop of Greek yogurt. You can eat this cold too, if you want to make it the night before and let it soak in the fridge overnight. Lots of people prefer it cold in the warmer months, but I always prefer my oatmeal hot.

Lunch: Soup, bacon wraps, slices of honeydew melon, and a glass of apple juice

Dinner: Sausage, toast, and asparagus

 

Cheesy Wild Rice Soup

Prepare rice according to package directions in a large pot. Stir in 4 cups of milk, a can of condensed cream of potato soup, 8 oz of cubed process cheese (Velveeta) and mix well. Cook and stir until cheese is melted. Be careful not to let rice stick to bottom where it will burn. Meanwhile cook 1/2 lb of bacon in a frying pan to be sprinkled on top for garnish. Can also add chopped parsley if you have any left from Week 1.

 

Smoky Bacon Wraps

Preheat oven to 400 degrees. Cut each bacon strip in half widthwise (1 lb worth of bacon). Wrap one piece of bacon around each mini smoked sausage link. Place on a foil-lined baking pan. Sprinkle with 1 cup of packed brown sugar.

Bake, uncovered, for 30-40 minutes or until bacon is crisp and sausage is heated through.

 

Apple Kielbasa Coins

Slice the 1 1/2 lbs-worth of fully cooked kielbasa (or Polish) sausage into 1/4 inch pieces. Bring sausage and 1/4 cup of apple juice to a boil in a large pot. Cover and cook for 5 minutes and then uncover and cook for 5 more minutes. Drain. Add 1/4 cup of apple jelly and 2 Tbsp of maple syrup.  Cook and stir until jelly is melted and sausage is coated. Serve with a slice of toast.

Asparagus – I put about an inch of water in a saucepan and simmer it with the asparagus floating on top for a couple minutes. Then I drain the water, plop some butter in the pan, and fry them for a minute with salt and pepper. Delicious!

Week 22

24 fresh jalepeno peppers

12 oz bulk pork sausage (this kind of sausage is not sold in links. It looks like ground beef. Italian sausage can also be used)

Breakfast: Muffin and eggs

Lunch: Chili, jalapeno, and an apple

Dinner: Macaroni casserole and okra

 

Wagon Wheel Chili

Cook 2 cups of wagon wheel or spiral pasta according to package directions. Meanwhile, combine a can of chili, a can of tomato sauce, 3 Tbsp of ketchup, and 1/2 tsp of chili powder. Mix well. Heat through. Drain and rinse pasta. Stir into chili. Garnish with shredded cheddar cheese.

 

Peppy Macaroni

Preheat oven to 350 degrees. Prepare a package of macaroni and cheese dinner according to package directions. Fold in two lightly beaten eggs. Spread into a greased baking dish. Top with an 8 oz jar of pizza sauce, 40 slices of pepperoni, and 2 cups of shredded mozzarella cheese.

Bake, uncovered, for 30-35 minutes. Let stand for 5 minutes before serving.

 

Grilled Jalapenos

Put on rubber or plastic gloves. (Very important! Or else your hands will be stinging and burning for days!) Wash 24 fresh jalapeno peppers peppers and remove stems. Cut a slit along one side of each pepper. Remove seeds. Rinse and dry peppers. Over medium heat in a skillet, cook 12 oz of bulk pork sausage and drain. Stuff peppers with sausage and wrap with half a strip of bacon. Secure with a toothpick.

Grill peppers for about 15 minutes on an uncovered grill over medium heat, turning frequently.
