Breakfast: Vanilla Chai Almond Smoothie

Lunch: Leftovers + kiwi

Dinner: Duck with Cherry Sauce, Turkey Tenderloin Supreme, or Sunday Chicken and Stuffing, rice, radishes and bell peppers

Dessert: Chocolate Hazelnut Pie

Duck with Cherry Sauce

Preheat oven to 325 degrees. Prick the skin of a 4-5 lb domestic duckling with a fork and place, breast side up, on a rack in a shallow roasting pan. Tie the drumsticks together. Bake, uncovered, for 2 hours. Drain fat from the pan as it accumulates. Cover. Let stand for 20 minutes before carving.

Meanwhile, for sauce, combine a jar of cherry preserves and 2 Tbsp of red wine vinegar in a small pot. Cook and stir over medium heat. Serve with duck. Garnish plate and serve with bing cherries, starfruit, and kale with a squeeze of lime.

Chocolate Hazelnut Blender Pie

  1. Preheat your oven to 400 degrees.
  2. Roast 1 cup of hazelnuts for 8 minutes until fragrant. Be sure not to burn them.
  3. Set aside to cool. Turn oven down to 300 degrees. When cool, roll off the skins [see tip].
  4. Throw 3/4 cup of coconut flour, 3/4 cup of cacao or unsweetened cocoa powder, 4 eggs, 2 cups of hemp or soy milk, 1/2 cup (or 1 stick) of melted vegan margarine, 3/4 cup of agave nectar, 2 tsp of natural vanilla extract, and a pinch of Celtic sea salt in a blender and mix on high until smooth and creamy. The mixture will be very thick. Taste the batter if you feel comfortable. Add up to 1/4 cup more of cacao/cocoa powder and/or agave nectar to taste if needed. If you aren’t comfortable tasting it raw, that’s fine, but make a note on your recipe for next time!
  5. Grease a 9″ pie plate and pour the mixture into the dish.
  6. Bake for about 40-60 minutes. Cool (the pie will continue to set, so try not to disturb it too much). When cooled completely, chill in the fridge.
  7. Serve with dollops of vegan cream, berries and/or shredded coconut.

Vanilla Chai Almond Smoothie

Soak 5 pitted dates in lukewarm water at least one hour before you plan to have the smoothie.

Put dates in a blender or food processor. Add 1 1/2 cups of unsweetened almond milk, 2 tsp of unsweetened cocoa powder, 1/2 tsp of cinnamon, 1/2 tsp of cardamom, and 1/8 tsp of vanilla extract. Blend until smooth and enjoy! Makes enough for one large smoothie or two smaller ones.

Turkey Tenderloin Supreme

Brown 6 turkey breast tenderloin slices in 1 Tbsp of butter in a large skillet. Add 3 thinly sliced green onions. Cook for 1-2 minutes. Combine a can of cream of chicken soup and 1/4 cup of water. Pour over turkey. Bring to a boil. Reduce heat. Cover and simmer for 8-10 minutes. Serve over rice.

Sunday Chicken and Stuffing

Preheat oven to 400 degrees. Prepare a package of instant chicken stuffing according to package directions. Spoon down the center of a greased baking dish. Place 6 chicken breasts around stuffing. Combine a can of cream of chicken soup, 1/3 cup of milk, and 1 Tbsp of parsley. Pour over chicken.

Cover and bake for 20 minutes. Uncover and bake 10-15 minutes.

Chow Mein (Dinner for Two Week 12)

Lunch: Pasta salad, Pear or Rhubarb, Peanut butter popcorn bars

Dinner: Chicken and broccoli chow mein or Turkey and stuffing pie, Cooler

 

Tricolor Pasta Salad                              I usually double this one and sometimes add chickpeas

Cook a package of tricolor spiral pasta according to package directions. Meanwhile, place a package of frozen California-blend vegetables in a glass dish. Cover and microwave for 7-8 minutes. Drain. Drain pasta and rinse in cold water.

Combine the pasta, vegetables, and a drained can of sliced ripe olives in a bowl. [Add chickpeas if using them.] Combine 1 – 1 1/3 cups of Italian salad dressing and 1/4 – 1/2 tsp of garlic salt. Pour over salad and toss to coat. Refrigerate until serving. 

 

Turkey and Stuffing Pie

Preheat oven to 350 degrees. If using raw turkey, cook 2 cups worth. If using deli, cube 2 cups worth. If using leftovers, shred 2 cups worth. Prepare 3 cups worth of stuffing (or use leftovers). Press stuffing onto the bottom and up the sides of a well-greased pie plate. Top with turkey and 1 cup of shredded Swiss cheese. Beat 3 eggs and 1/2 cup of milk. Pour over cheese. Bake for 35-40 minutes. Let stand 5-10 minutes before serving. 

 

Chicken and Broccoli Chow Mein

Preheat oven to 350 degrees. Cook and cube 2 chicken breasts. Chop up broccoli. Combine a can of cream of chicken soup, a can of chicken with rice soup, and a can of evaporated milk in a bowl. Stir in chicken and broccoli. Transfer to a greased baking dish. Bake, uncovered, for 40 minutes. Stir. Sprinkle with chow mein noodles. Bake 5-10 minutes. 

 

Peanut Butter Popcorn Bars

Pop 3 bags of popcorn. Place in a large bowl. Set aside. Bring 1/2 cup of sugar and 1/2 cup of light corn syrup to a boil in a pot over medium heat, stirring constantly. Boil for 1 minute. Remove from the heat. 

Stir in 1/2 cup of creamy peanut butter and 1/2 tsp of vanilla extract. Mix well. Pour over popcorn and mix under well coated. Press into a buttered pan. Cool slightly before cutting. 

 

Sunny Citrus Cooler

Combine a can of pineapple juice, 2 cans of thawed orange juice concentrate, and 3/4 cup of lemonade concentrate in a pitcher. Add 6 cups of ginger ale or white soda and mix well. Serve over ice. Garnish with orange slices. Refrigerate leftovers.

Summer Sippin’ (Dinner for Two Week 8)

Lunch: Snowball Peaches, Green Salad with Balsamic Salad Dressing, Papaya or Guava

Dinner: Hamburger Casserole or Beef Bake, Bell Pepper or Artichoke, Mint Iced Tea Cooler or Lemonade Slush

Balsamic Salad Dressing

Combine 3/4 cup of tomato juice, 1/4 cup of balsamic vinegar, an envelope of Italian salad dressing mix, and 2 tsp of sugar in a jar with a tight-fitting lid. Shake well. Store in the fridge.

Salad suggestion: Leaf lettuce and red cabbage with carrots, grilled asparagus, a can of drained mandarin oranges, chopped or dropped cherries, and cranberries

Snowball Peaches

Beat 2 packages of softened cream cheese and 2 Tbsp of apricot preserves in a small mixing bowl until blended. Drain a can of pineapple tidbits. Stir 1 cup of pineapple into cream cheese. Drain 3 cans of peach halves and place peaches cut side up on a lettuce-lined serving platter. Fill with cream cheese mixture. Garnish with fresh mint.

Tortilla Beef Bake

Preheat oven to 350 degrees. Cook 1 1/2 lbs of ground beef over medium heat in a skillet. Drain. Stir in a can of cream of chicken soup. Sprinkle 1 1/2 cups of crushed tortilla chips in a greased shallow baking dish. Top with beef mixture, a jar of salsa and 1 1/2 cups of shredded cheddar cheese.

Bake, uncovered, for 25-30 minutes. Sprinkle with 1 more cup of crushed tortilla chips. Bake 3 minutes longer.

Hearty Hamburger Casserole

Preheat oven to 350 degrees. Cook 1 lb of ground beef over medium heat in a skillet. Drain. Stir in a can of ready-to-serve chunky vegetable soup and set aside. Prepare stuffing mix according to package directions. Spoon half into a greased baking dish. Top with beef mixture, 1/2 cup of shredded cheese, and remaining stuffing. Bake, uncovered, for 30-35 minutes.

Mint Iced Tea Cooler

Steep 3 peppermint-flavored tea bags in 7 cups of boiling water for 5-10 minutes. Discard tea bags. Pour tea into a pitcher or large bowl. Stir in 1 cup of cranberry juice and 3/4 cup of pink lemonade concentrate. Cover and refrigerate overnight (so flavors can fully blend). Serve over ice.

Lemonade Slush

Combine 1 1/2 Tbsp of partially thawed lemonade concentrate, 2 Tbsp of milk, 1 1/2 Tbsp of water, 1/8 tsp of vanilla, and a drop of yellow food coloring in a blender. Cover and process. Crush 2 ice cubes. While liquid is processing, slowly add crushed ice. Process until slushy. Serve immediately. Enough for one serving.

Fruit Galore! (Dinner for 2 Week 6)

Lunch: Sunshine Salad or Fruit Salad with Maple Cream Fruit Topping; Pear or Date; Roasted Mixed Nuts

Dinner: Turkey Broccoli Hollandaise or Fisherman’s Specialty; Black Salsify or Eggplant; Mock Champagne Punch

Maple Cream Fruit Topping

Combine 1 Tbsp of all-purpose flour, 3/4 cup of maple syrup, and 1 egg in a pot until smooth. Ad 1 Tbsp of butter. Bring to a boil. Boil and stir for 2 minutes. Cover and refrigerate until completely cooled. Whip 1 cup of heavy whipping cream. Fold whipped cream into flour-maple syrup-egg-butter mixture.

Spoon on top of fruit salad or sliced melons.

Fruit Salad Suggestion: Sliced strawberries, bananas, kiwis, cubed honeydew melon, and squeeze a lime on top of everything to keep fruit tasting fresh and to prevent browning in the fridge.

Sunshine Salad

Drain a can of pineapple tidbits and a can of mandarin oranges, but reserve the liquid. Combine a package of instant lemon pudding with reserved fruit juices in a large bowl. Fold in pineapple, oranges, and 1 cup of quartered strawberries. Chill for at least 2 hours. Add a few slices of banana to each serving just before eating.

Turkey Broccoli Hollandaise

Cook and cube two turkey or chicken breasts or use leftover cooked chicken or turkey from a previous dinner. You will need approximately two cups worth.

Preheat oven to 325 degrees. Place 1 inch of water and 1 cup of fresh broccoli florets in a saucepan. Bring to a boil. Reduce heat. Cover and simmer for 5-8 minutes. Meanwhile, prepare a package of stuffing mix and an envelope of hollandaise sauce mix according to package directions.

Spoon stuffing into a greased baking dish. Top with 2 cups of cooked chicken or turkey. Drain broccoli. Arrange over turkey/chicken. Spoon sauce over the top. Sprinkle with a can of french-fried onions. Bake, uncovered, for 25-30 minutes.

Fisherman’s Specialty

Crush 30 crackers into a pie dish or shallow bowl. Beat 2 eggs and a tsp of lemon-pepper seasoning in another shallow bowl. Dip 6 bluegill, crappie, or perch fillets in egg mixture, then coat with cracker crumbs. Sprinkle with another tsp of lemon-pepper seasoning.

Heat 1/4 inch of vegetable oil in a skillet. Fry fillets for 3-4 minutes on each side.

Roasted Mixed Nuts

Preheat oven to 300 degrees. Combine 1 lb of mixed nuts 1/4 cup of maple syrup in a bowl. Mix well. Sprinkle with 2 Tbsp of brown sugar and an envelope of ranch salad dressing mix. Stir gently to coat.

Spread in a greased baking pan. Bake for 20-25 minutes. Cool. Store in an airtight container.

Mock Champagne Punch

Combine equal parts of white grape juice and ginger ale in a punch bowl or individual glasses. Garnish with strawberries and raspberries.

Six-Can Chili

Combine a can of chili with beans, a drained can of mixed vegetables, a drained can of whole kernel corn, a can of tomato soup, a can of diced tomatoes, and a can of green chilies in a pot and heat through.

(I use this recipe A LOT – I honestly ate it every day for two months once and never got tired of it. I found different things to do with the chili and started adding spices and would sometimes add other leftover vegetables I had. It’s still used as a staple in my house.)

 

CheeseShakes                                                                                   (One of the most delicious things in the world…)

Place 1/2 a pint of vanilla ice cream, 1/2 cup of buttermilk, 1/2 tsp of grated lemon peel, 1/4 tsp of vanilla extract, and a very small drop of lemon extract in a blender. Cover and process on high until smooth. Pour into a glass. Refrigerate any leftovers, but I doubt you will have any!

 

Pork Chops with Apples and Stuffing

Preheat oven to 350 degrees. Brown 6 boneless pork loin chops in 1 Tbsp of vegetable oil in a skillet over medium-high heat. Meanwhile, prepare stuffing according to package directions. Spread a can of apple pie filling into a greased baking dish. [Sprinkle cinnamon on top if it’s not included in the can.] Place pork chops on top. Spoon stuffing over chops.

Cover and bake for 35 minutes. Uncover and bake for 10 minutes longer.

Week 35

Dinner: Turkey casserole

 

Chilled Cantaloupe Soup

Peel, seed, and cube a cantaloupe. Place cantaloupe and 1/2 cup of orange juice in a blender or food processor. Cover and process until smooth. Transfer to a large bowl. Stir in 1 Tbsp of lime juice, 1/2 tsp of cinnamon, and 1 1/2 cups of orange juice. Cover and refrigerate for at least 1 hour. Garnish with fresh mint leaves.

 

Thanksgiving in May

Preheat oven to 350 degrees. Prepare a 6 oz package of stuffing mix according to package directions. Transfer to a greased baking dish. Top with 2 1/2 cups of cubed deli turkey, 2 cups of cut green beans, a 12 oz jar of turkey gravy, a chopped onion, and pepper to taste. Cover and bake for 30-35 minutes.

 

Chocolate Cream Fruit Dip

Beat a package of softened cream cheese and 1/4 cup of chocolate syrup in a small mixing bowl. Fold in a 7 oz jar of marshmallow creme. Cover and refrigerate until you’re ready to eat it. Eat with apple wedges, fresh strawberries, and banana chunks.

Week 33

Shopping List:

Cream cheese

1/4 lb of sliced Genoa salami

7 slices of deli ham

Okra pickles or dill pickle spears

Envelope of Italian salad dressing mix

Crushed stuffing mix

4 cod fillets (6 oz each)

Lunch: Soup, ham pinwheels, and 1/2 a grapefruit

Dinner: Cod, rice, kohlrabi, and a tossed salad with lettuce, jicama and Jerusalem artichoke and ginger dressing

 

Chicken Dumpling Soup

Combine 2 cans of condensed cream of chicken soup and 2 2/3 cups of milk in a pot. Bring to boil over medium heat. Reduce heat. Combine 1 2/3 cups of biscuit/baking mix with 2/3 cup of milk until just blended in a bowl.

With a rounded tablespoon, drop batter onto simmering soup. Cook, uncovered, for 10 minutes. Cover and simmer 10-12 minutes. Do not lift lid while simmering.

[Note: I would actually divide recipe in half or in quarters, if you can, as I discovered that the dumplings do not reheat well at all]

 

Crumb-Coated Cod

Preheat oven to 425 degrees. Combine 2 Tbsp of vegetable oil, 2 Tbsp of water, and an envelope of Italian salad dressing mix in a shallow bowl. Place 2 cups of crushed stuffing mix in another bowl. Dip 4 6 oz cold fillets in salad dressing mixture and then in stuffing.

Place on a greased baking sheet. Bake for 15-20 minutes.

 

Simple Ginger Salad Dressing

1 Tbsp of finely chopped ginger, 1 tsp of garlic, 2-3 tsp of parsley, 1 Tbsp lemon juice, 2 Tbsp honey, 2 Tbsp of chili sauce, and 6 Tbsp of olive oil. Blend ingredients in food processor or just put in a mason jar and shake.

 

Ham Pickle Pinwheels

Cut an 8 oz package of cream cheese. Place cream cheese, 1/4 lb of sliced Genoa salami, and 1 Tbsp of horseradish in a blender or food processor. Cover and process. Spread over 7 deli ham slices.

Remove stems and ends of 14-21 okra pickles or dill pickle spears (# depends on length). Place 1-3 pickles down the center of each ham slice. Roll up tightly and wrap in plastic wrap. Refrigerate for at least 2 hours. Cut into 1 inch slices.

 

 

Week 12

Breakfast: Homemade instant oatmeal with pieces of dried fruit and nuts added in. There should be eggs and toast leftover from last week as well to use up.

Lunch: Sandwich and an orange

Dinner: Turkey stuffing rolls, sliced cucumbers, and rice

Late Night Snack: Nachos

 

Applesauce Sandwiches

Spread 1/4 cup of applesauce on a slice of bread and top with another slice of bread. Lightly butter the outsides of the sandwich. Toast on a hot griddle for 3-4 minutes on each side. Combine 1/4 Tbsp of sugar and a dash of cinnamon. Sprinkle over hot sandwiches.

 

Turkey Stuffing Roll Ups

Preheat oven to 350 degrees. Prepare stuffing mix according to package directions. Meanwhile, combine can of cream of chicken soup and 3/4 cup of milk in a bowl and set aside. Spoon about 1/4 cup of stuffing onto a slice of turkey. Roll up and place in a greased baking dish. Repeat with all the turkey slices or until stuffing is gone. Pour soup mixture over roll ups.

Bake for 2o minutes. Sprinkle with a can of french-fried onions. Bake 5 minutes longer.

 

Easy Cheese Nacho

Put a handful of tortilla chips on a plate. Warm 1/3 of a can of chili without beans in a small pot. Meanwhile, in another pot, heat 1/6 of the cheese over medium-low heat until melted, stirring frequently. Spoon chili over chips and drizzle with cheese. Sprinkle with 4 sliced green onions and a chopped tomato.
